Just made a Potato Casserole Recipe from an old Fort Bend County cookbook my Meme was a part of putting together decades ago. The cookbook is filled with classic recipes from Fort Bend County women. Talk about some good home cookin’! This recipe is great for entertaining, will feed 8-10 people easily! Delicious, but not exactly healthy- more recipes to come.
The original recipe is above, but here are my modifications. For easy cleaning and transporting cook in a foil pan! I used Lawry’s Seasoned Pepper instead of pepper and mixed up the cheese a little bit throwing in Pepper Jack and Velveeta Shreds as well! I ran out of salted stick butter and had to use unsalted butter and add salt- I think it tainted the flavor a bit. This would probably be wonderful with freshly grated gourmet cheeses as well!
